Easy Dinner that looks gourmet!

I made this quickly on a weeknight while the kids played, and I had a lot of these ingredients on hand already.

Simply coat the salmon with paprika, salt, pepper and a little cinnamon and heat a pan of oil (I used coconut) over medium heat. Once the pan is hot, place salmon skin or skinned side down and cook 2:30 seconds each side to crust and place on a baking dish in oven at 375 for 5 minutes and then let rest for 3-4 minutes out of oven**. In the same pan you cooked the fish, add sliced yellow onion, salt and pepper and brown, picking up the flavors from the fish. Next add sliced roasted tomatoes and olives and a tablespoon of tomato paste. Coat the contents of the pan in the paste and then add some water (2 tablespoons at a time) until a sauce is formed. Top fish with sauce and add some sliced fresh basil as a garnish. I added a salad, roast asparagus and roasted potatoes.  Now enjoy!

**Times depend on size and thickness of fish and desired doneness, this was based on a 4oz salmon filet
